Roasting is where science meets artistry — and every step matters. Here's a look at the journey from raw green bean to the perfectly roasted coffee in your bag.

Step 1: Sorting and Inspection

Before any heat is applied, green beans are carefully sorted and inspected. We check for defects, inconsistent sizes, and moisture levels. Uniformity at this stage ensures even roasting later. A batch with inconsistent beans will roast unevenly — some underdeveloped, some scorched — so this step is non-negotiable.

Step 2: Drying Phase

The roasting drum heats up and the green beans go in. In the first few minutes, the beans absorb heat and moisture begins to evaporate. The beans turn from green to yellow, and the roastery fills with a grassy, hay-like aroma. This phase is all about preparing the bean for the chemical reactions to come.

Step 3: The Maillard Reaction

As temperatures climb, the Maillard reaction kicks in — the same process that browns bread or sears a steak. Sugars and amino acids interact under heat, creating hundreds of new flavor and aroma compounds. The beans shift from yellow to a light tan, and the smell transforms into something far more recognizable: coffee.

Step 4: First Crack

This is a pivotal moment. As internal pressure builds, the beans audibly crack — a sound similar to popcorn popping. This is called first crack, and it marks the beginning of what most would consider a drinkable roast. Light roasts are typically pulled shortly after first crack, preserving the bean's origin characteristics and bright acidity.

Step 5: Development Phase

After first crack, the roaster enters the development phase — a critical window where the roast profile is shaped. Time and temperature here determine whether the final cup is light and floral, balanced and sweet, or deep and bold. Our roasters monitor color, aroma, and sound continuously during this phase, making real-time adjustments to honor each bean's unique character.

Step 6: Second Crack (For Darker Roasts)

If the roast continues, a second crack occurs as the bean's cell structure begins to break down. Oils migrate to the surface, giving darker roasts their characteristic sheen. The flavor profile shifts toward roast-forward notes — think dark chocolate, smoke, and caramel. We use this level selectively, only when the bean's profile calls for it.

Step 7: Cooling

Timing the drop is everything. The moment the roast hits its target profile, the beans are released into a cooling tray where they're rapidly cooled with moving air. Leaving beans in the drum even seconds too long can push the roast past its ideal point. Speed and precision here lock in all the work done in the previous steps.

Step 8: Degassing and Resting

Freshly roasted coffee releases CO₂ — a process called degassing. Brewing too soon can result in an uneven extraction and off flavors. We rest our beans for 24–72 hours (longer for espresso) before packaging, ensuring you get the cleanest, most balanced cup possible.
