After training under some of Italy's most celebrated roasters, Sofia honed a skill that is equal parts science and intuition. She learned to read a roast by sight, sound, and smell — to know the exact moment a bean reaches its peak, when its natural sugars caramelize just right and its origin flavors bloom to their fullest expression.
